Sweet Italian Rice Cakes

1 Cup Risotto
2 Cups Milk
1/2 Cup Sugar
4 oz (1 stick) Unsalted Butter
Grated Rind of 1/2 Lemon
1 Cup Golden Raisins
4 Egg Yolks
3 Egg Whites
Pinch of Cinnamon
12, 4 oz ramekins, buttered or sprayed with non-stick spray

Soak raisins in water, set aside
Boil risotto in 2 cups water for 5 minutes, then drain
Bring Milk and Sugar to a boil
Add Risotto, lemon rind and cinnamon
Cook over low heat until liquid is absorbed, stirring constantly
Remove from heat
Stir in the butter and drained raisins
Let cool for 5-7 minutes
Stir in egg yolks
Let cool for another 10 minutes
whip eggwhites till they form soft peaks
Fold eggwhites into the risotto mixture
Pour into prepared ramekins
Bake 30-40 minutes until tester comes out clean
Let cool, then sprinkle powdered sugar on top
