Well for the directions I got (300ml of mix, 250ml of milk, 1 egg)
It said it was enough for a 10-11 pancakes.
So yeah don't make them too large and Cook a bit longer before flipping. The first one you made wasnt too big, I just think you needed to wait a bit longer :P

I made pancakes myself with the exact same mix etc tonight.
To me it said 300ml of the mix and 250ml of milk :S
so maybe your first problem?
Also you have to let them cook longer before flipping, and you cant have them that large or else it doesnt fully cook which is why you got only chunks cooked on the 2nd one.
