Searing is to hold in the juices, and this knucklehead is piercing the meat with a fork, youre supposed to use tongs to flip it.

there is a flavor difference between something seared and something not seared because it renders the fat on the outside and carmelizes it . . .

hahaha, this is a terrible video. a. the pan wasn't hot enough and didn't "sear" worth shit b. wtf, a hotplate? and c. do not put your hand near the oil to "feel the heat" to see if it's hot enough. aha, what the hell? that is the stupidest thing i've ever heard, and very dangerous.

This guy absolutely SUCKS. Does that look seared to anyone? Hell no, that pan should have been HOT...spitting oil when he dropped the meat on, and the meat should have immediately stuck to the pan... that meat slid around the oil without sticking because the pan never got hot enough to cook anything.
