The various bits you see in the trailer that didn't make it into the game are things VALVe decided not to include in the final release, for whatever reason (tech limits, doesn't move the game forward, they're not happy with how it looks/performs, etc). It actually happens a lot in video games.
It happens a lot in movies, as well. Many times you can watch an early trailer for a movie, and then find that scenes in it are not in the final release.
