Erik, sorry I have one more question, after stretching out the pizza to shape, can you store it til needed. I would love to have the crusts ready for making so I don't have to take so much time doing it between orders. Again, thank you Michael.

Erik, great tutorial. I'm building a Food Truck and will be serving Pizza, do you recommend a cost efficient counter top pizza oven, maybe something you used while working in the restaurants? And why is it that my dough does not stretch out like yours does, It returns to it's small shape all the time. One other thing, do you know of any companies that sell pre-made dough that ship it?
