thee best muffins ever

Banana Choc Chip Muffins

3-4 ripe bananas
3/4 cup sugar
100gm butter or just under 4 oz
1 egg (out of the hen house)
2 tablespoons milk
1 teaspoon baking powder
1 teaspoon baking soda
1/4 salt..( I dont add salt...dont know why its in recipe)
1 1/2 cups plain flour
1/2 cup chocolate chips (or use sultanas and walnuts or use them all together YUM )
melt butter..cool
add milk, egg to butter and stir
mash bananas, add sugar and van essense
add all above ingredients together
mix in sifted flour and baking powder and soda
mix lightly with fork
add choc chips (walnuts, sultanas)
put in muffin try
bake 15 mins in a good oven...might need 20 minutes in shitty oven (like mine)
Eat as fast as possible before anyone can get their greedy mits on them!

  • I just made these and my house smells like heaven!

     I only had unsalted butter so added 1 tsp salt

    I forgot all about the salt and added it after mixing in the chocolate chips

    (big mistake? I mixed it well)

    My muffins look lovely and smell great but erm... came out a bit salty :(

    How much salt should I add next time please?

  • @stardustkay Personally I have tried these with salt and without and to be quite frank there is no difference so leave the salt out. I use salted butter but sometimes I use unsalted and dont add salt, they taste just as scrumptous.

  • do the banana have to have dark spots??

  • @TheJunglelipstick no, they've modified the bananas these days anyway so you rarely get a banana that goes brown when you mash it...they have to screw with everything!

  • Do you have to heat the oven first before you put your muffin in?

  • I think you need to rewatch it says it at the very start
