主料 / 鮮蚵 600g、九層塔 10g、青蒜 5支、蔥 2支、辣椒 1支、蒜頭 2粒、豆鼓 1匙、地瓜粉 適量
調味料 / 胡椒? 1大匙、糖 1小匙、醬油膏 3大匙、酒 少許、香油 少許

【台式炸蚵仔酥】做法
1、備油鍋加熱後,將鮮蚵均勻裹上地瓜粉,入160度油鍋炸至酥脆。
2、起鍋回炸第二次,放入九層塔炸片刻撈起即可。

【蔭鼓蚵】做法
1、將青蒜根莖部劃開,與蔥一起切成小段,辣椒切片,蒜頭切末,備用。
2、鍋中煮沸熱水,汆燙鮮蚵撈起備用。
3、鍋中入少許油爆香青蒜和蔥段,再放辣椒和蒜末,炒香後放入豆鼓,嗆入米酒。
4、倒入燙熟鮮蚵,入醬油膏、糖續翻炒片刻,起鍋前入香油即可。
