That doesn't look like cow tongue at all. We have beef tongue pretty regularly and it looks nothing like that. It's acctually quite tasty though.

You get liquid smoke the same way you get distilled water: put a dome over a smoking fire (not toxic wood, please) and collect the condensation that runs off the sides.
