Arran Stark, chef at Brassica Restaurant in Port Townsend, Washington, gives another cooking demonstration at the Port Townsend Farmers Market. In this episode he presents a "Port Townsend Bean Dish" using several varities of bean with onion, garlic, and butter. He includes a little bit of a Washington wine for "pucker" and some parsley from Nash's Farm. Arran cooks at Brassica Restraurant which is open on Friday and Saturday nights. He uses local and seasonal produce, meats and dairy whenever possible. Arran exemplifies the ideas expressed in the Slow Food movement. His restaurant is increasingly popular as a destination for those planning to visit Port Townsend.
