I actually really like what you've done with it. I just got done grilling mine with a little big of lemon juice, black pepper and a smidge of garlic, then I tossed it in with my salad and called it good.

i like to infuse my fish with herbs like green onion and dill, green peppers and salt and pepper olive oil and butter yummmmm :P
