what's that handle he grabs up to his left?

It's just a fixed hand hold, he grabs it to steady himself while snapping in and out of rolls and to pull himself back up into the seat after high Gs.

It's a trick of the camera, it doesn't actually flick on and off.

Why does his radar screen and the other one go on and off?

He probably doesn't, but in an environment like a demo, where he knows what maneuver he's doing and when, it's probably more comfortable for him to be able to brace himself... saves some some jostling around the cockpit.

Yeh I noticed that too but thought surely he doesn't need that to make a roll. Maybe it's to support him whilst going upside down..

im wondering about the same...it seems like he grabs the handle every time he does a hard turn..
