it seems with modern fluid sims the physics are correct, but there aren't enough polygons to simulate real water. this test looked like something thick like oil.
I must say, this could come as great use in a fluid simulation. If you would take the time, I'd be willing to be you could make something amazing with that piece of fluid simulation object. I've also found that if you're using outflow spheres as bubbles, so as to create the effect of boiling water, that you can use particles on a lighter tone to make steam.

Thats because he had it on a lower resolution. The higher you go, the more polygons but the longer time it takes to bake.
