It's true that EX Alice fights very differently than how we see her in the Windows era games, but I'd say you can blame that on her using the book. In MS Stage 3, Alice fights alonside a pair of fairies (during every single one of her attacks; a new one appears a few seconds later if you kill them off) that could well be dolls of hers.

I've got a hard time believing that the Alice here and the Windows Alice are just one and the same. This one attacks so furiously with confidence and has little to no dependence to dolls I think.
