We call "Kake-Soba".Only soba noodle.not ramen(such as Sapporo). Japanese usually eat soba noodle with soy source based soup ,not Miso based.

But I have only cook dried noodles in packages so far, not any thing packaged in a fridge. But even instant Ramen noodle packages (Which I hate by the way, no flavor.) say it takes 3 mins to cook. Also the shop keepers shake that basket with the noodles so hard, multiple times, some times even switching baskets... doesn't that damage or break the noodles? I mean I understand the purpose is to get all the water off them, but noodles seem so delicate...

@Jerrid3 Oh I forgot your next question , Udon and Soba seem so delicete but they are tough enough to swing for get water off . It(means the toughness) is called "Koshi"in Japanese.

I have been watching videos of Japanese noodle shops and have noticed that the noodles are "shown" to be cooked with in seconds... are they preparing them when a potential customer comes in, are some already cooked and ready to go hoping for the next customer to arrive quickly or is the water so hot that it only takes a few seconds, 30 at most to cook them? Or are these fresh noodles from the refrigerator and are already "wet" so to speak? When ever I cook noodles, they take between 3-4 mins.

@Jerrid3 In such noodle shop, Soba or Udon is cooked after order , and as they are soft and "wet" enough, a 30 seconds cook is enough to serve.

@Jerrid3 seems meat is not meat but thin sliced dried bonito. So we can eat it without any cooking.
