These spicy, nutty cakes are based on a southern German Christmas-cookie recipe (Elisenkuchen). They are free from grains/gluten and dairy, contain healthy fats, antioxidant, anti-inflammatory and anti-cancer plant compounds (nuts, spices, citrus peel), polyphenols (spices, chocolate) and are sweetened with low-glycemic acacia honey. NutritionData's analysis estimates a glycemic load of 3, so even people with blood-sugar issues should be able to enjoy these. Of course, they're rich in calories due to their high fat content, but since they're so satiating, a little will go a long way and you won't want to gorge on them anyway. To get a copy of the recipe (it's not in my book), email me via the author tab on 'Zest for Life'the website: www.zestforlifediet.com. Happy Holidays!
