While these aren't exactly the recipes I use in my own kitchen, your videos are very nice for demonstrating how to assemble a roll. I worked briefly in a Japanese restaurant, so I've been trained on how to make sushi. But I don't do it often, so it's nice to get a refresher before I dive in to it again.
