@99voltsdotcom i just smoked some striped bass in mine i got for xmass i put a 50/50 salt and b-sugar with some black pepper and let sit on a rack overnight in the fridge and smoked them for 2.5 hrs on around 125oF with the crown royal bisquettes it was exelent

have you ever made steak jerky or dry smoked salmon in it? i bought one today and i am wondering if the water keeps the meat moist.

I have a Bradley smoker for 3 ys now & i love it. My fave to smoke is baby back ribs using the hickory or mesquite brisquettes to smoke them for 6-7 hrs. If u start around 6 am they are ready to eat by 1:00p. I have also smoked whole chickens, sausages & briskets. I just make up my own dry rub as I go. I use to live in TX and know what good smoked BBQ is all about and this smoker produces smoked meats that are pretty darn close. I can't recommend it enough.
