Sandwich as an art form? Learn everything about a Smorrebrods - traditional Danish open sandwich.


So what is served in thousands of restaurants and comes in hundreds of varieties and is eaten by most Danes it can only be a Smoerreboed. Ida Davedson is one of the favorite places in Copenhagen to have Smoerreboed. I am Ida Davedson, I am the fourth generation of the Danes family. And we have the fifth generation also here today. We are making Danish open-face sandwiches. The Danish open-face sandwich is Denmark's national dish. You cannot be more Danish if you eat open face sandwich. That is very, very important that you go to Danish places that make these things. Simply put, Smoerreboed's like an open sandwich, but to call it only a sandwich would be offending it. It is much more than that, it is an art-form. A Smoerreboed starts with a thin bread, and then salad or fish or meat on it. But the moment for a Smoerreboed-maker to shine is when the garnish is placed.

We are making special ones here because they are all different kinds of people's favorites. We have, as in the old days, when Danny Kalib came every summer to Denmark and then he came down here and was working together with us in the kitchen. And we have several of ours due to Boga. He came also every summer, he has his own table in there. And he also made his own sandwich with a, he loved Danish fish. With so many different combinations, you actually have unlimited choices in Smoerreboed. Here we have Princess Alexander. She has made this one herself. She likes Sushi, so we have raw salmon with wasabi cream and salmon caviar and this is also caviar made out of seaweed and crayfish shells and dill. And that is a Princess Alexander.

We had to come here to eat. This is Copenhagen's most famous food. This is the smoked salmon and it is absolutely delicious. -This here is one open sandwich we never pertain and it is called Mr. Kaiser. Mr. Kaiser was president of Tibilly for many years. And this here is the Slips Knarkot and it is salami with smoked cheese and spicy mayonaise. Stone Pete is a very famous Danish drawer. He used to come here every day for lunch. And when he was sitting here eating, he also made some drawings. The table I am sitting at, Prince Yorkin was sitting at when I came inside. At a time, typical Danes eat three or four of these, accompanied with a beer, with a snaps with a lid or a glass of milk or a soft drinks. So which type of Smoerreboed will you have when you go to Copenhagen? As you can imagine it can be simple and it can be so elated. I am Marion Shuwa, showing you Copenhagen.
