Recipe: Great Chicken Rice Casserole
2 cups cooked wild or white rice
½ cup chopped or grated onion
½ cup chopped celery
1 can cream of chicken soup
½ of large jar of Kraft Cheese Whiz
½ large can evaporated canned skim milk
2 cups cooked chopped broccoli
½ cup cooked mushrooms (optional)
2 or 3 cups cooked boneless chopped chicken or canned with half of the juice
Beau Monde Seasoning by Spice Islands, salt, & pepper
Goes on top:
Crushed Ritz Crackers
Canned Romano/Parmesan Cheese
Sharp cheddar cheese
Directions: Add about 3 tablespoons of butter in a pan over heat...cook until onions are done, then add celery and cook briefly. Add all ingredients in the pan over low heat. Add seasonings until it tastes right to you. Combine all together well. Spoon the mixture into casserole dishes. Sprinkle crackers and cheese on top. Cover top of casserole dishes with foil. Bake at 350 degrees for 20 minutes. Take the foil off and sprinkle the top with sharp cheddar cheese. Place back in the oven and cook for about 10 more minutes. Let cool some before serving. For a quicker way, just broil the top of the casserole until cheese is melted well and/or a bit golden. Enjoy!
