This is how I prepare Mapo Tofu at home. Although Pork and vegetables are usually added to the dish in restaurants, my version omits these ingredients. Serve with white rice and a salad or steamed vegetables. It's also delicious with Ramen and Gyoza.
**Ingredients**
Extra Firm Silken Tofu -- half a block pressed and cubed
Doubangjiang -- about a teaspoon
Douchi -- about a tablespoon
Sake -- about 1/3 cup
Rice Wine Vinegar -- about 1/4 cup
Soy Sauce -- about a teaspoon
Extra hot Chili flakes -- about 2 teaspoons
Ginger paste from about 1 1/2 inch piece of Ginger
1 stalk green onion, chopped
2 dried Sichuan chilies
Press and cube the tofu.
Heat oil in the wok and brown tofu.
Add Doubanjiang to the oil and mash it to mix.
Add green onions and douchi.
Add sake, vinegar and soy sauce.
Add Ginger paste and dried Sichuan chilies.
Gently stir together until the liquid mostly cooks out, leaving a thick gravy.
Plate and serve.

You speak so clearly and instruct with a vigor that thrashes the Cyclops! I will cook or be cooked by the Cyclop's laser ray.
