Trial and error, thats what it is all about! You still go the job done right?

From someone who has worked with stainless, it is vey hard stuff, try using a 7/8 hole saw specifically made for stainless(they are a bit pricey). After drilling your pilot hole, theywill do a petty decent job, and they make a groove pretty quickly that can be used as a trough for your cutting oil. WD40 will work, but a Hi Temp oil will last longer before burning away.

Just wanted you to see how it was in real life.

Also, if you use the pilot bit in the hole saw itself for a 1 step hole, start your drilling with a 3/8X1" washer around the pilot bit until it punches through..this will keep the drill from spinning when the saw catches the steel. Just a few pointers...great video series.
