How to make a classic Moroccan tajine of chicken with carrots and olives. It is healthy, so easy to make, and simply delicious. The olives give an unexpected twist to this dish, and bring authentic Mediterranean aromas to the palate. I have already made a chicken carrots tajine before, but this recipe is better and includes olives instead of preserved lemons.

  • good point! I really like the idea and I will work on finding a way to integrate this in the videos. Usually the tajines are served with bread (not rice).

    thank you for this Tajine, but I have a question, why you didNt add Tomatos in the begioning?

  • There are no tomatoes in this chicken tajine recipe - however, other recipes, especially the ones with lamb, will call for tomatoes.

  • is it supposed to come out a ilttle sweeet ?? my one did come out sweet for some reason did everything like you said/

  • yes, the sweetness comes from the carrots. so depending on the carrots you are using (for example, when I am lazing I use baby carrots, and yes, it comes much sweeter than when I use normal carrots)

  • How would this recipe go if cooking in a tangine? Would you add 2 cups of water still? Are the olives added after you take it out of the oven and stirred in to cook in the juices?

  • Made this tonight. The only variation I made was to add 1 tbsp of honey for sweetness and serve it with cous cous rather than bread.
