Dont you find it highly ironic that the most OBVIOUS strategy to flip over the most pieces as possible for all your turns is the worst thing you can do?

hm, why is F7 the better move in the example you give? I couldn't think of a good reason...

Ah good a question :)
The answer simply lies in looking at whites next moves. With d6 you leave a fairly obvious move to d6 and the position is neutral with options for both.

....while with f7 notice the shape of the bunch.
Watch lesson 6 and notice the checkerboarding pattern appearing in the boxes:

Making all of whites moves uncomfortable and the correct move difficult to spot.
