No bivalve is more American than the clam nor is any other shell-dweller more versatile in the kitchen. Learn the ins and outs of clam identification, decide which ones to use where, buy a clam opening device and make a wicked chowder.

Recipes featured in this episode: Radonsky for the New Millenium, Clams on the Half Shell with Fresh Mayonnaise, and Clam Chowder.

  • that is so wrong you never ever use canned clams...

  • 2:20 Only on Good Eats...

  • THING WEARS CLOTHS?!

  • Good Eats is great. There is 1 mistake in this episode though, at 1:32 they are Little Neck clams not Cherry Stones. Try and eat Cherry Stones like that and you will be chewing for weeks.

  • Hatteras Style beats them all/

  • Tomato based clam chowder is of Portuguise origin (Probably by way of the Azores, actually), not New York, a point which they make in the show. And the Portuguise do wonderful things with seafood, and have for centuries.

Personally, I prefer linguine in clam sauce over claam chowdah. >:P

  • Clam chowder with tomatoes...tsk tsk tsk those people will have there pots taken away D<

  • "1 tbsp of bacon fat (sissies can use butter)."

  • lol at 2:30

    sissies can use butter XD

  • i love clam chowder
