  • By "sauce", do you mean the oil-spice-mustard mix? If so, consider the purpose for that mixture is twofold. The oil is there to help give the potatoes a crispy browned texture. Along with the relatively high heat (450*) it basically "fries" the surface of the potato without completely saturating it, like deep frying. Without oil, they will still cook but not as nicely. The other stuff is just for flavor which is entirely up to your preference. This flavor, another flavor, or no flavor.

  • this is a good video. For mine I'll have to use vegetable oil, and I'll probably only use salt and pepper rofl.

  • @blade83336 Peanut oil has a higher smoking point. Olive oil will burn at that temperature.
