for longer smoking wrap the meat in foil since you really only need a couple of hours of smoke, after that you are not getting good smoke and can over smoke your meat making it bitter.

How is the pie tin arranged? Is it through the bottom are over a hole in the bottom or on the bottom being heated through the bottom. You should have shown a picture of the bottom. Thanks for what you did show though.

You should burn the zinc off as much as possible at VERY high temps (read flame thrower/torch) if using galvanised. Despite urban legend and quoted melting temps you DO get toxic by products when heating galvanised metal even at low temps.
Other than that - i made an improv smoker and did a 3 hour pork shoulder and it was unbeliveable.
