  • You should burn the zinc off as much as possible at VERY high temps (read flame thrower/torch) if using galvanised. Despite urban legend and quoted melting temps you DO get toxic by products when heating galvanised metal even at low temps.

    Other than that - i made an improv smoker and did a 3 hour pork shoulder and it was unbeliveable.

  • for longer smoking wrap the meat in foil since you really only need a couple of hours of smoke, after that you are not getting good smoke and can over smoke your meat making it bitter.

  • How is the pie tin arranged? Is it through the bottom are over a hole in the bottom or on the bottom being heated through the bottom. You should have shown a picture of the bottom. Thanks for what you did show though.
