At the very end, when the rice is wavy and nearly done, you can add butter, cheese and start stirring wildly for a couple of minutes, turn off the heat and let it rest for a moment, lid on. Done.

I use Carnaroli too, but my risotto is even faster than Jamie's. If you really toast rice before you add the wine, then you do not need to add liquid bit by bit and stir. You toast the rice until it looks glazed, add the wine, let it evaporate *without stirring* (just once to let the liquid seep to the bottom of the pan), then add enough liquid to completely cover the rice, stir once and let it bubble away. If you are good at gauging amounts, the risotto will be al dente, wavy and will not stick

An entire cube of chicken bouillon is overpowering. Try half and a bit more of white wine, but not more than a cup.
