I think you have to reduce or eliminate all together the compression. The compression seems to maybe remove frames from the recording and cause the jumps. The only problem is you end up with a huge file to work with. Then Camtasia ends up having issues when editing the file.
If you really want to record a smooth recording of your ride use the built in CTRL+SHFT+F11 recorder for RCT3. It is super super slow, but has the best results.

I was gonna test this, but if you were to biuld a roller coaster, could you have got on, ride the ride, and get them off with to stations, like a shuttle like transport. Some rides get the passengers off before it reaches the main station to get on. If you understand what im trying to say, do you think it would work???

Yes, what you are describing will work.
You can get a sampling of that in my Transport Rides tutorial(s).
If you do make more than one station area look for the added options for if you want cars to leave as soon as other cars arrive or after a certain period of time. You can also 'sync adjacent stations' for rides that have stations next to each other.
