The farlands/the Edge of Minecraft are simply because of.. well, the limits of programming.

It happens with every language... I, myself, am a programmer. In a game, when you step outside the bounds of a tile map array, the tiles displayed are random and really weird... Just like the far lands. It also gets to the point where it looks like what is in this video, where random things change and collision is messed up. If you go far enough outside the bounds of the array, the game crashes. :P
