Mixeraeration kitchen Intelle Mixer is intended for recipe mixing in the set mode and at the set temperature for confectionery products, cottage cheese and other food masses of liquid and average degree of viscosity. With success souffle, cottage cheese cream and other similar masses can be applied to mixing, also light biscuit dough and marshmallow can also be produced. Mixing and beating processes are isolated from environment. Mixing by the cleared air or nitrogen is possible, that considerably improves quality of a product and raises a period of storage. Aeration process in a stream occurs in a tight head - to the turbine at constant pressure and temperature to accurately set proportions of giving product and gas for mixing. Therefore the density, viscosity and mass temperature on an exit is constant. At an exact volume dosage the mass, the size and the form of products is guaranteed. The module for coloring/aromatization of the made foam mass and injection of acid (hardener) is applied on exit of Intelle Mixer for bifurcation of a stream of mass and giving it other color, taste and a smell is required. Additional injection of acid in a stream provides fast jellification of the product. The module can work as the independent block for preparing masses for the manufacturing of pies or foamy sweet cheese curds, as well as a part of complex CreaSweet with program controlled feeding-forming modules, heads IntelleDrop and Intelle Mix. With the help of coloring module on IntelleMix two-colored masses in the form of marshmallow, a zephyr, cookies, etc can be deposited.
Intelle Mixer consists of a recipe mixing tank of periodic action, a buffer tank for storage of a mixture ready for aeration to aeration heads of vertical continuous type for mass mixing in a stream. Mass feeding into head is carried out by software with the help of adjustable high-frequency dosing pump, and nitrogen or air movement is controlled by a high-frequency flowmeter-dozatorom. Complex is equipped with the system of temperature and pressure maintenance in a head with high accuracy of density of mass on an exit. All required elements of system are thermo stable, the temperature of mass is set by the technologist, and is supported automatically. IntelleMixer is supplied by system of automatic control of productivity depending on consumption of mass by heads and CIP-system of an automatic folding sink which is connected to IntelleWash general system CIP for cleaning of complex CreaSweet.
