@Kar0n That's a question I get a lot. How do I not cut myself on the horizontal cuts? I don't have a perfect answer. My hand is definitely in the line of fire so to speak. Watch carefully, my left hand sort of peels back as the knife slides through. It's really instinct as I've cut thousands of lbs of onions. Experience being the best teacher and all. I've cut myself a bunch doing this before but at this point I've become one with the knife and it's merely an extension of my hand.

when you're making the second set of cuts on an onion( horizontal), is your left hand completely above the knife's path? I'm really curios to know how are you so confident to cut fast towards your hand

@Chefknivestogo Thanks! Yeah the produce I've been getting is peaking all over the place. Doesn't hurt to have a super sharp knife to keep them looking their best! Try this sometime on just about any grilled protein...

I saw lime juice, salt, pepper, olive oil, and honey... is that correct? I know it probably is.. just never think to add olive oil to help the consistency. Sometimes it comes out dry when your knife is too sharp I guess ;o)

@MrKnifeFanatic Extra virgin olive oil adds fat, fat = flavor. Gives it a nice body.
