アジやいわしなど青魚を出刃包丁でたたき、みじん状態になったら、ねぎ、みそ、しょうがを加え、さらにたたき生で食べます。あまりの旨さから『皿までなめろ』となることか­らなめろうとよばれる様になったそうです。
