I ate a few maple seeds off my tree. The squirrels like them. Tasted kind of bitter. I think I'll try boiling some. Maybe roast some.

They get more bitter as they age from the tannins I believe. I found the ones that are still completely green and moist throughout are the mildest and almost taste like a raw green bean or the like.
Roasted might be the way to go. I'm going to dry some, grind them into powder and see if it will make an acorn flour of sorts. They shouldn't require leaching like acorns do though.
Thanks for letting us know, and I hope you'll update me if you try the boiling and roasting.

I was back in a woods close to my house, looking for Morels earlier in the year and I came across an Oriental woman with a basket gathering all kinds of edibles. I tried to talk with her as well, and she was very stand offish. I was trying to find out what she was gathering. She really would not communicate at all. I know what you mean. It was very interesting. She may have not wanted any "competition" because it may have been a very important part of there diet perhaps.
