Marco Levy works at Benissons bakery in Evanston, IL as an artisan bread baker. He found out about his passion for baking while in culinary school, which he attended after high school. Now 24, Levy takes pride in the products he makes by hand, and he says the job is great because he can eat the tasty items he makes from scratch.
But under the apron and the remnants of flour, one might notice Levys tattoos. One of them is his name in Greek, another is a Hawaiian motif. Levy says its the closest hell get to that American state, at least for now. In the meantime, he sets his hopes on traveling to Paris for the culinary coupe du monde in 2016, and before then, on training in different cities around the United States.
However, Levy is not just a baker with tattoos. Hes also the guitarist in a heavy metal band, Guns, Knives and Accessories. Levy says there are parallels between his job and his passion. Besides teamwork being a common factor in both aspects of Levys life, baking has also helped ameliorate his dexterity, which improves his guitar-playing skills.
In the future, Levy sees himself opening his own bakery in San Diego with no ceiling, he says, because the weather is so nice there.
