  • is it not bad to have extra virgin olive oil at such a high heat? because it starts to smoke.

    The extra virgin olive oil and the peanuts oil are the best to use to fry. They can reach very hight temperatures. The Mediterranean cuisine is based on extra virgin olive oil.

    The smoke you see during the tuna fish cooking is the steam coming out form the fish.
