Recipe: Cheese Quesadilla (for ketogenic diet), aka Sam Special
Ingredients:
Cream cheese (or Mascarpone)
Kraft Deli Select American Cheese (or shredded cheddar)
Lo-carb wheat tortilla (Tam-x-ico brand)
Butter
Garlic, chopped fine
Fruit
Heavy cream
Preparation:
Mix garlic with soft, room temperature butter (this can be done ahead). Cut tortilla
to proper weight. Place cheeses on half of tortilla and fold the other half over.
Place heavy non-stick skillet over medium-high heat. Meanwhile, smear some garlic
butter on one side of tortilla. When skillet is hot, place quesadilla buttered side
down in skillet, sauté until golden brown. Turn quesadilla and cook briefly, just
until brown and cheese is melted. Remove quesadilla to plate, off heat. Melt
remaining garlic butter in still hot skillet, then pour over quesadilla. Serve with
sliced fruit on the side and with cream, mixed if desired with diet Sunkist or other
keto-approved soda.
