At Del Fresh mushroom farm I learned that grains inoculated with spores are planted into compost so that the spores can grow into the mycelium (network of organisms that make up the fungus under ground). When the environment of the mycelium is changed quickly it thinks it is in danger and grows mushrooms to release spores to reproduce in case its days are numbered. Super cool. Mushrooms are high in fiber, B vitamines (for metabolism) and vitamin D.
