I love American Crew Fiber but I wish I could get more volume like you seem to be able to do with the Mousse. I want to keep the matte look though. Any suggestions?

Hi that easy, use the moose let it dry and rip it up with your fingers or a comb, then a a soft mat wax, moste clay waxes would work.
