Had an impeccable dinner at the London restaurant in Manhattan.
And after all the decadence, we were invited back to see the kitchen in action during peak hours.

  • If this is the peak time, than I assume that restaurant makes all his money mainly through their prices of the menus?

    I worked in kitchens that were much busier and with loads more orders hanging from the rack.

  • @sazkwatch - You should see some of the hotel restaurants in Tokyo. There are over 200 cooks. Fine food with elegant plating takes TIME. When you have 50 orders coming in, you can do the math and figure out how many cooks you need in the kitchen to get everything out on time, looking good. The more complex the food, and the more customers there are, the bigger the kitchen and the more employees.
