Farm to Table: Celebrating Idaho's Food

On Oct. 1, 2011, The College of Idaho hosted "Farm to Table: Celebrating Idaho's Food" in conjunction with The Year of Idaho Food. This video features Idaho food historian Susan Swetnam, the Fool Squad (which includes C of I theatre professor Joe Golden) and remarks by Scott Knickerbocker, professor of English and environmental studies, on the local food movement. The College of Idaho's supports the study of local food production through its environmental studies program, its student Sustainability Stewards and using local ingredients in its dining hall.
