The main reason this scene was removed was because the timeline between when Burke was captured and impregnated by the facebugger didn't match up with its life cycle. If Burke was impregnated by the facebugger just hours before, it would still be all over his face, smothering him.
This was still an awesome scene that took nearly 25 years for us to finally see.

Evidently James Cameron really didn't like this scene, so he's actively prevented it from being released. Besides, it doesn't really fit with the lore set by ALIEN; it's supposed to take a few hours before the chestburster comes out (fucks you Anderson and your "hormones").
I think the encounter also ruins the mood that you're supposed to feel here, so that's another reason for leaving the scene out.

wow that scene soooo did not suit that actual part of the film... i mean the feeling was ment to be that feeling of being alone with little time and wondering when the aliens would figure out she was there.... meeting burke just watered down the feeling.... no wonder james cameron took this out.
