Also: If you watch closely, you'll notice that he initiated that drift by doing a tiny little Scandinavian flick (turned away from the turn before turning in to it), followed by a quick yank on the handbrake (you'll see the mark the rear tire leaves on the ground). After that, he probably let the clutch back in (you have to push the clutch in to use the handbrake, or else you can mess up your drivetrain) as he floored the gas to break traction on the rear tires to continue the slide. Nice.

The DCCD (Driver Controlled Center Differential) doesn't change the transfer of torque to the front or rear wheels (that's a common misconception). The transfer of torque in an STi is always split at 40% front / 60% rear. The DCCD setting changes the amount of slip in the center differential. You can set it anywhere from fully locked (so all wheels rotate at the same rate) to fully open (allowing some wheels to spin faster). Open allows the rears to break free and spin faster for "drifting".
