I think Cid's theme from FF6 (3, whatever you wanna call it) would be awesome. It's pretty much pre-suited to an electronic arrangement, anyway.

Some of my all time favorite music from NES has got to be from Little Nemo and Mega Man II... but if I could only request one song, would have to be from Mike Tyson's Punchout! I love that bass-line when you're fighting that first fight against Glass Joe. That's a song I would listen to.
