  • Nice recipe but just a small warning to people, when you make this and have the filling, don't cross contaminate with the spoon in the chicken's body then back in the couscous bowl, prepare a seperate bowl in between so you can reserve some extra couscous to serve at the end like Alia did. Also make sure the chicken is cooked before tasting the water. Thanks

You're absolutely right! meat should be handled with the presumption that it is poisoned, and should not be cross-contaminated (when it's raw) with other products. very good catch! I tend to miss these things while shooting the videos. glad you pointed it out! thanks again!!!!

One more Q, in Moroccan cooking is it common for the meat to be braised/sealed/browned in oil before liquids are introduced or is the idea that the tajine is similar to a slow cooker so the meat simply cooks in it's own juices for a long period of time? Because I noticed you don't braise the meat, and in my culture it's simliar, it's more of a cooking/boiling meats in the water/sauces. :) Thanks!

  • yeah, you got it right. The meat is sealed in oil, onions, and spices for few minutes to absorb the flavors then water is added, so it's pretty much boiled. and Tajine is actually a clay pot used like a slow cooker, it's usually cooked on coal (low heat) for few hours. The meat is then very tender and flavorful. the last step in more tajines is to uncover it and let the sauce thicken (via evaporation). glad you enjoy the videos! cheers!!!
