I think it's easier to hit high notes & falsetto if your chin is raised, opening up your throat & air flow a little more. That would explain his tendency to hold it that high. It may also just be his style. He seems very calm on stage and focuses hard on his voice, which is probably easier to do looking up rather than having to stare at the audience. It's probably a combination of the two but I guess we won't know until someone asks him.
