Dude, you rule... I watched this when you posted it and I made the plan to buy the ingredients at that time. So, tonight I finally made my first batch and HOLY COW they turned out perfect! First time I've baked anything from scratch. Thanks for the inspiration!

Good bagels probably don't fit the whole Japanese bakery model of mixing and freezing the dough in a factory somewhere.
