@FedSsss ci sono anche io in questo video.. il taglio a mano viene fatto principalmente per la campionatura.. poi per la produzione viene usato il taglio a fustella (come dici tu macchinario automatizzato) almeno che vi siano pochi pezzi da produrre.
Questa è semplicemente una dimostrazione, che trall'altro sono stati tagliati molti passaggi.. la lavorazione delle borse può essere più facile rispetto ad un portafoglio, ma è decisamente più lunga.

Una curiosità: come mai la pelle (in questo caso e nel caso delle scarpe da uomo) viene tagliata a mano col taglierino, mentre nel video delle scarpe da donna viene tagliata da un macchinario automatizzato?

Dipende dal modello della scarpa che si sta producendo, vi sono modelli da uomo e da donna che hanno una lavorazione artigianale completa perchè è il modello della calzatura che lo richiede.
