  • @octavian99 Glad your enjoying the series. The criticisms are taken in stride as long as people don't get abusive and vulgar. When that happens I just delete the post. I've always said that my way is not the only way. It is what has worked very well for generations of our family and the videos were done to share this method. Thanks for the positive comments and I wish you success in your smokin' ventures!

  • I am born and raised Texan myself and honestly have never seen Brisket cooked or processed this way. My favorite is to smoke for about 4-6 hours, then wrap tightly in foil and finish cooking another 4-6 hours until done, in either the oven or on the smoker. Makes for a very juicy and tender brisket with a very nice smoke ring. My family likes the fat left on the meat as well. We can eat on a brisket for a week or more. :) Thanks for sharing your way.

  • @jwlrymkr Thanks for your comment. I welcome other ways to cook brisket as I don't believe one way is the only way. Just because we all don't have the same set up doesn't mean we can't cook a great brisket and pass along our methods. I like to share the different ways to serve brisket as well. Thanks again for sharing your thoughts!

  • Oh My God, how could you treat such a wonderful piece of meat like a good brisket with such disrespect and turn what could have been a decent meal into finely pulverized beef dust? I have been cooking BBQ for years and have never seen a piece of meat treated this way.

  • You've been cooking BBQ for years and you've never heard of chopped beef? This "dust" as you called it, allows the brisket to be enjoyed in other ways than just a sandwich. I try to show people that there is more than one way to do something. I can assure you that if you ever got the chance to taste one of my briskets, chopped or sliced, you would rethink the way you do it is the only way. As far as a decent meal, heck it don't get no better than this!

  • As a fellow Texan (username from time in the service), I do my brisket with an offset smoker with hardwood only. I've never seen this technique but I'll probably steal some of your ideas on my next brisket. Thanks!
