After being impressed with a Jacques Pepin video where he demonstrates and instruct how to de-bone a chicken, I wanted to give it a try. I give you the URL to see his demo inside the video.

I used a veggie stuffing and an Herb Provencal to season and glazed with a Balsamic Herbal Vinaigrette.

A Galantine makes a very impressive plate when served.

  • FABULOUS, was this the first time you tried this after viewing the Jacques Pepin video?

  • @MusicforMe123 Yes it was. In real time the de-boning took about 25 minutes that first time. I have gotten faster each time I do it.
