Minute Recipe: Chicken Persillade. Jacques breaks with tradition to make a Skillet Apple Charlotte cooked in a single pan. From a jar of mayonnaise, he makes a dressing -- that's his alone -- to serve with eggs, anchovies, and tomatoes in a Harlequin Salad. And when veal isn't an option for the classic scaloppine, Jacques chooses turkey breast for a twist in Turkey Scallopini with Morels served with Middle Eastern Couscous with Saffron.

  • @werewasyo I think it's inhaling with a bit of a sucking sound towards the end. There's good one at 5:06.

    He's still amazing though.

    I think he's a culinary genius. When I'm watching him I'm always intrigued by how everything seems to come so natural to him. He dazzles with such ease. He's arguably the best, but notice he never acts pompous about his celebrity of status.

  • Such a good idea for that store-bought chicken! He's so good alone, though I do miss him with Julia! :D He's a master!

  • he didn't use veal b/c its expensive, but used morels and a huge pinch of saffron. LOL!

  • I wish I could find his "Cooking with Claudine" series. He makes great stuff look easy!

  • I just finished making the scalopini (sp) with chicken breast and whole milk instead of cream, I also used portabella mushrooms instead of morel (couldn't find them anywhere) but WOW is this amazing. I hate chicken breadt for being dry, but this was amazing.

  • Using the chicken fat and juice as a sause for supermarket chicken? ARE YOU FUCKING KIDDING ME? I've been throwing that stuff out for years like an asshole. How does Jacques even think this stuff up?
